Apple Cinnamon Oatmeal
This brilliant breakfast recipe is taken from Leanne Brown’s Good and Cheap. By using rolled oats and 100% Apple Juice or Apple Cider, you avoid many of the sugars that you would typically get in a sweetened oatmeal, while still getting a delicious and sweet tasting breakfast! Plus, it will only cost you $1 per serving!
Serves 2
Ingredients:
- 1 cup rolled oats
- 2 cups apple juice or cider
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 apple, cored & chopped
Directions:
In a small pot, add the oats, juice or cider, and salt. Place it on medium-high heat, just until it comes to a boil. Immediately turn the heat down to low and place a lid on the pot. Cook for 5 minutes, until the oats are soft and tender. Top with an apple, or if you want the apple to be soft and warm, cook it along with the oats!
Apple Sandwiches with Granola and Peanut Butter
This delicious fall snack adds plenty of fiber and protein to your day and will give you lots of energy! Have your kids participate in the preparation by helping to spread on the peanut butter or sprinkle the granola!
Serves 2
Ingredients:
- 2 small apples, cored and cut crosswise into 1/2-inch thick rings
- 1 teaspoon lemon juice (optional)
- 3 tablespoons peanut butter or almond butter
- 3 tablespoons granola
Directions:
Slice the apples across and use a small knife or cookie cutter to remove the core. If you won’t be eating right away, brush the apples slices with lemon juice to keep them from turning brown.
On one half of apple slices spread the peanut butter or almond butter. Sprinkle on the granola and then place a second apple ring on top to form a sandwich!
